Pauline Bistro

Meet Pauline, a stylish restaurant which is sure to charm the brunch and breakfast crowd. The space has a light and airy feel, with a design reminiscent of a 1920s French bistro and dishes inspired by French cuisine.

The muse for the concept was Pauline Boutal, a well-known St. Boniface artist and actor who created fashion illustrations for Eaton’s in its heyday. The concept is a nod to the surrounding Francophone community. It’s a place with broad appeal, but with those special touches that take it to the next level. The menu showcases the hotel’s house-made pastries, jams and other favourites.
